    This sounds and looks stunning. I never would have imagined coconut and rhubarb together, but the second I started thinking about the combination my mouth started watering … that’s a good sign, if ever! And thank you for a nut-free and gluten-free option – I can eat gluten but I’m allergic to nuts and always have a really hard time coming up with fun new dessert recipes when we host our celiac friends.

      Thanks, Bowen! Are you able to eat seeds? I’ve been playing with homemade sunflower seed flour a lot. It’s a bit funny because it can turn GREEN if you’re using baking soda (harmless chemical reaction) but otherwise it has been a great substitute in gluten-free recipes that call for almond flour.
